Appetizer Time!


Bread & Butter Pickles
2 qt. cucumbers
6 medium onions
2 c. vinegar
2 c. sugar
1 tsp. each celery seed and mustard seed
1/2 tsp. ginger
1/2 tsp. tumeric


Slice cucumbers and onions thin. Soak in water 1 hour. Use 1/4 teaspoon salt per 1 quart of water. Drain well. Boil vinegar, sugar and spices together. Add drained cucumbers and onions. Simmer 25 minutes. Place in sterile jars and seal.

Cucumber Tuna Boats
3 medium cucumbers
1 (6 oz) can tuna, flaked
2 hard-boiled eggs, chopped
1/2 c. shredded Cheddar cheese
1/2 c. diced celery
1/4 c. mayonnaise or salad dressing
2 Tbsp. sweet pickle relish
1 Tbsp. finely chopped onions
1 tsp. lemon juice
1/2 tsp. salt

Cut cucumbers in half lengthwise. Remove and discard seeds. Cut a thin slice from bottom of cucumber so they lay flat. In a bowl, combine remaining ingredients. Spoon into cucumbers.

Dill Crackers
2 (12 oz) bags oyster crackers
1 c. cooking oil
1 heaping tsp. dill weed
1 (4 oz) pkg. original Hidden Valley dry Ranch salad dressing mix
1/2 tsp. garlic powder

Place crackers in bowl. Sprinkle with oil, dill weed, salad dressing mix and garlic powder Toss. Toss several times for 30 minutes. Keep in airtight container.

Shrimp Cheese Ball
1 (4oz) can tiny shrimp, washed, drained
and patted dry
12 oz. cream cheese, softened
dash of Worchestershire sauce
3 Tbsp. minced dry onions
1/2 c. Hellmann's mayonnaise

Mix ingredients and form into a ball. Cover and refrigerate four hours.
When ready to serve, cover cheese ball with the following sauce:

Sauce:

1/2 c. ketchup
1/4 c. horseradish
dash of lemon juice
dash of Worchestershire sauce

Three Cheese Spread
1 (8oz) container Cracker Barrel extra sharp cheese
1 (8oz) soft Philadelphia cream cheese
1 (8oz) Kraft mild shredded Cheddar cheese
1 Tbsp. finely chopped green pepper
1 Tbsp. finely chopped pimento
1 tsp. grated onion
1 tsp. Worchestershire sauce
1/2 tsp. lemon juice

Combine ingredients, mixing well until blended. Chill. Serve with assorted crackers and/or fill celery.
